Eggplant Salad

Ingredients

  • 4 medium eggplants
  • 1 egg yolk
  • Juice of half a lemon
  • 50 g olive oil
  • 4 cloves of garlic
  • 1 dessert spoon sugaar
  • Salt
  • A few olives to garnish

Preparation 

Cook the eggplants until they are soft. Peel the skins with the help of a small knife by holding the stems, chop them finely, put them in a deep bowl, pour lemon juice, egg yolk olive oil and garlic into the eggplant you have prepared in a sauce pan. Add salt and sugar and mix for 2-3 minutes. Serve cold. If desired, very finely chopped green pepper, tomato and parsley can be added to this mixture.
