Imam in Fainting

Ingredients

  • 4 eggplants
  • 4 medium onions
  • 12 cloves of garlic
  • 2 tomatoes peeled and chopped
  • 2 whole tomatoes
  • 2 finely chopped chili peppers
  • 4 whole peppers
  • Half a bunch of chopped parsley
  • 4 tablespoons of olive oilı
  • 2 teaspoons of sugar
  • Salt
  • Olive oil for frying the eggplants
  • 1 glass of water

Preparation 

Peel the eggplants with the stems on them. Pierce in several places with the pointed tip of the knife, salt and leave for half an hour, then wash and dry. Fry the eggplants in frying olive oil until they soften, remove from the oil and wait for a while on a towel napkin to absorb the oil. Place them on a baking tray and make holes in the middle of the eggplants with the back of the spoon.

Preparation of Mortar 

Put 4 spoons of oil in the pan, when it gets hot, add the onion and garlic cut into thin rings and fry until they turn pink. Add chopped tomatoes and peppers. After frying for 5 minutes, add salt, sugar and water. Cook for 20 minutes, turn off the fire. Take the mortar in a strainer, separate the water, pour it into a bowl, add the chopped parsley, mix and fill in the eggplants, cut 2 whole tomatoes in half, place them on the eggplants, bake in the oven at 180 degrees for 15 minutes. Fry 4 peppers in oil, place them on the eggplants, serve warm or cold.
