Spinach Root

Ingredients

  • ½ kg spinach root
  • medium onion finely chopped
  • 8 cloves of finely chopped garlic
  • One small julienned carrot
  • Salt
  • 1 teaspoon sugar
  • 100 g olive oil

Preparation 

Separate the spinach into leaves and cut into 7-8 cm lengths with the root. Wash it well and throw it into boiling water with lemon and salt. Boil for 5 minutes. Then take it out of the boiling water and throw it into the ice water; Wait 10 minutes. Take a strainer and put olive oil in a saucepan and heat it. Add the chopped onion, garlic, carrot and sauté for 10 minutes. Add the spinach in the strainer and sauté for another 5 minutes. Add salt and sugar. Stir for 2 more minutes, close the lid of the pot, let it cool and serve cold.
